Seb’s Marinated Lamb Skewers

Put Lamb into large bowl or strong food bag, add the olive oil, wine, lemon juice, garlic, black pepper, thyme, rosemary, chilli (do not add salt yet) mix together so that Lamb is completely coated, then chill and leave to marinate for a few hours or overnight.

Season the meat with salt, then put 4 – 5 pieces on each skewer and cook on a griddle or grill for 10 – 12 minutes, turning until cooked to your liking.

Serve with grilled Red Peppers, Lyonnaise Potatoes, Wilted Spinach and Red Wine Jus
