1Kg Rump Lamb (fat trimmed) cut into chunks

100ml Olive Oil

100ml Red Wine

2 Garlic Cloves Crushed

1tbs Salt

1Put Lamb into large bowl or strong food bag, add the olive oil, wine, lemon juice, garlic, black pepper, thyme, rosemary, chilli (do not add salt yet) mix together so that Lamb is completely coated, then chill and leave to marinate for a few hours or overnight. |

2Season the meat with salt, then put 4 – 5 pieces on each skewer and cook on a griddle or grill for 10 – 12 minutes, turning until cooked to your liking. |

3Serve with grilled Red Peppers, Lyonnaise Potatoes, Wilted Spinach and Red Wine Jus |
